Keto Cornbread



What you will need:

1 PKG Butter Kookie Mix

2 Eggs

4 Tablespoons melted Butter

1/2 can Baby Corn, pureed 

2 Tablespoons Sour Cream

1 Teaspoon Baking Powder

Parchment Paper

Loaf Pan

Makes 6 servings

Preheat oven to 350 degrees.  Line loaf pan with parchment paper.

Mix all ingredients in bowl.  Pour batter in loaf pan and bake 30-35 minutes.

Let cool 20 minutes.

Notes: We used Reese's brand baby corn.  You can puree the baby corn using a food processor or blender,  We use only half the can but if you want a stronger corn flavor you could probably use the entire can adding an additional 2 net grams of carbs to the entire recipe.

Prepared macros:  225 calories, 18 g fat, 16 g total carbs, 3 g fiber, 10 g sugar alcohol, 8 g protein.  3 net grams of carbs per serving.
