You WIll Need:
4 Tablspoons Softened Butter
1/2 Teaspoon Peppermint Extract
Pink Food Coloring - Optional
1/3 - 1/2 Cup White Chocolate Chips
1/3 - 1/2 Cup Chopped Nuts
1/2 Cup Sugar Free Condensed Milk
Handful Sugar Free Peppermint Candies - Crushed
Preheat oven to 350 degrees. Line loaf pan on long sides with parchment paper. Use 1 piece that extends up both long sides of the pan, this makes it easy to remove the bars once cooled.
In a bowl, mix together the Kookie Mix, egg, softened butter, peppermint extract and food coloring.
Reserve 1/4 cup of the dough. Press the remaining dough into the loaf pan making sure it pressed tightly against all 4 sides of the pan.
Bake for 15 minutes. Remove from oven.
Layer the White Chocolate Chips, Chopped Nuts and Crushed Peppermint Candies. Pour the Condensed Milk over the top. Don't worry if it doesn't cover the entire surface, it will spread while baking.
Crumble the reserved dough over the top and return to the oven and bake an additional 15 minutes.
Remove and let cool completely. To remove from pan, gently run a knife along both ends of the loaf pan and using the parchment paper, lift bars out of pan.
Cut into 8 bars.
3 Net Carbs Per Bar.
Notes: Feel free to omit the food coloring. Also, you can omit the peppermint extract if you do not want a pronounced peppermint flavor.
Use any nut of your choice, we used Walnuts. Also, feel free to add or change the toppings listed in the recipe. We do not care for coconut but it would be a delightful addition to the toppings. Get creative!
