What You Will Need:
1 Butter Kookie Mix
5 Tablespoon Softened Butter
2 Cups Blackberries
1/8 Cup Sweetener
1/8 - 1/4 Teaspoon Xanthan Gum
For the Shortcakes:
Bake Butter Kookies according to package directions.
For the Blackberry Compote:
In a small to medium pan, combine berries and sweetener. Cook the berries on medium heat until they start to break down and the sweetener dissovles. Continue to cook the berries and mash them slightly. Once they take on a sauce consistency, add xanthan gum, 1/8 to 1/4 teaspoon depending on how much liquid is in the pan. Cook the berries and xanthan gum a minute or two longer and then remove from heat. The compote will thicken as it cools.
Once the Kookies are cooled, place one cookie on a plate and top with Blackberry Compote, top with an additional Kookie and more Blackberry Compote and top with whipped cream. Sprinkle with a light dusting of Cinnamon, if desired.
You can substitute different berries for the compote.
You can substitute Berry Chia Jam for the compote.
