What You Will Need:
For The Blondies:
1 Package Chocolate Chip Kookie Mix
2 Eggs, Room Temperature
5 Tablespoons Melted Butter, Cooled
1/2 Cup Peanut Butter
1 Teaspoon Vanilla
1/4 Teaspoon Baking Powder
For The Ganache:
1/2 Cup Sugar Free Chocolate Chips or Chopped SF Chocolate
1/2 Heavy Whipping Cream
1/8 - 1/4 Cup Peanut Butter
Preheat Oven to 350 degrees. Line an 8 x 8 baking pan with parchment.
Mix all Blondie Ingredients. Pour into prepared pan and bake 20-25 minutes. Ovens vary so begin to check at 15 minutes. You want to bake until the middle is just set as it will continue to set once removed from oven.
While the Blondies are baking make the Ganache. Pour Heavy Whipping Cream into small saucepan. Heat on Medium until scalding, do not boil.
Place chocolate into a bowl and pour hot cream over top. Let sit 30-45 seconds. Using a spatula, begin mixing the cream and melting chocolate until chocolate is completely melted and smooth. Add the desired amount of peanut butter and stir until incorporated and smooth.
You can place the Ganache in the fridge for about 5-10 minutes to thicken up. Pour over the top of the Blondies and spread to cover evenly. Return to fridge to let the Ganache firm up completely.
Cut into Bars.
Makes 12 servings - this makes pretty big bars so you can cut them smaller if you prefer.
