You Will Need:
5 Tablespoons Softened Butter
1 Tablespoon Cocoa Powder
1 1/2 Teaspoons Instant Espresso Powder
2 Tablespoons Heavy Cream Powder*
Preheat oven to 350 degrees. Line baking sheet with parchment paper.
Mix all ingredients until well combined. Scoop dough into balls and place on prepared baking sheet. Slightly flatten. cookies will not spread out like regular cookie dough while baking.
Bake 8 - 10 minutes. Remove and cool on rack.
Notes: You can increase Heavy Cream Powder to 3 or 4 Tablespoons for a more milk chocolate flavor dough. If you do not have Heavy Cream powder, you can try using liquid Heavy Whipping Cream. Decrease butter to 4 Tablespoons and then add the Heavy Cream. If using liquid Heavy Cream, I would only add up to the 2 Tablespoons.

These Kookies would be fantastic topped with a little Whipping Cream and Shaved Chocolate or a Chocolate Drizzle.
