You Will Need:
1/2 Cup Ground Golden FlaxSeed
1/3 - 1/2 Cup Peanut Butter
Water or Heavy Cream - Optional
1/2 Cup Sugar Free White Chocolate Chips
2 Tablespoons Peanut Butter
Mix all ingredients in bowl until well blended. Start with 1/3 cup Peanut Butter and then add until desired consistency. This will be very thick. You can add water or heavy whipping cream to thin the consistency if needed.
Line a loaf pan with parchment so it extends up both the long sides of the pan. Thia will make removing the fudge easier.
Pat the fudge/dough into the pan and refrigerate until set.
Once set, melt together 1/2 cup white chocolate chips and 2 Tablespoons peanut butter, mix well. Pour over top of fudge to cover completely. Return to refrigerator to set. You can use more white chocolate chips if you want a thicker topping.
Once topping is set, run knife along the ends of the pan and remove using parchment paper. Cut into bite size pieces.
Notes: Not all peanut butter is created equally. There are several brands that have peanut butter with 2 Net Carbs per serving but most have 4 Net Carbs per serving. Walmart's Great Value Organic Natural Peanut Butter, Laura Scudders Natural Peanut Butter and Kroger Brand Natural Peanut Butter are 3 that have just 2 Net Carbs per serving.
Carb count will depend on amount of peanut butter used in final recipe and how many pieces you cut the fudge into. For our shoot we cut our fudge into about 36 pieces which is about 1 Net Carb or slightly less per piece.
