Mix all ingredients in bowl until well blended. Start with 1/3 cup Peanut Butter and then add until desired consistency. This will be very thick. You can add water or heavy whipping cream to thin the consistency if needed.
Line a loaf pan with parchment so it extends up both the long sides of the pan. Thia will make removing the fudge easier.
Pat the fudge/dough into the pan and refrigerate until set.
Once set, melt together 1/2 cup white chocolate chips and 2 Tablespoons peanut butter, mix well. Pour over top of fudge to cover completely. Return to refrigerator to set. You can use more white chocolate chips if you want a thicker topping.
Once topping is set, run knife along the ends of the pan and remove using parchment paper. Cut into bite size pieces.
