You Will Need:
1/2 Cup Peanut Butter
3/4 Cups Sugar Free Chocolate Chips
1 Tablespoon Coconut Oil
Combine Peanut Butter Kookie Mix and Peanut Butter, mix until well combined. Roll dough into balls and freeze for 30 minutes.
When ready to dip, place Chocolate Chips and Coconut Oil together and microwave in 30 second increments, until melted, stirring well between each interval.
Insert a toothpick into Peanut Butter Bowl and dip half way in melted chocolate. Place on wax paper or parchment paper to set. You can leave the toothpick inserted in the Buckeye until chocolate has set or remove it earlier. Once the chocolate has, carefelly use your finger or the back of a spoon to smooth over the toothpick hole.
Net Carbs depend on the carb content of your peanut butter and how big you make your Buckeyes. Keep an eye out, there are several Peanut Butter brands on the market that clock in at 1-2 Net Carbs per serving.
We use Great Value Organic Peanut Butter which has 1 gram of net carbs per 2 tablespoons. We also made our Buckeyes smaller so ours come in at 1 Net carb per Buckeye.
