Ingredients

1 Butter Kookie Mix
- 1 Egg
- 1/8 Cup Melted Butter
- 2 Tablespoons Cocoa Powder
- 1/4 - 1/2 teaspoon Mint Extract - See Notes
- For Coating:
- 9 ounces Sugar Free Chocolate Chips
- 1/2 - 1 teaspoon Coconut Oil
Directions
- Mix all ingredients together until well combined.
- Place dough on plastic wrap, shape into a disk, wrap in plastic wrap and place in the fridge for at least 30 minutes.
- Preheat oven to 325 degrees. Place parchment on a baking sheet.
- Remove disk from fridge, unwrap and place between two sheets of parchment. Roll out dough to desired thickness and make cutouts using a round cookie cutter.
- Carefully transfer cookie cutouts to the prepared baking sheet. Continue rolling scraps until all dough has been used.
- Bake 15 minutes or until cookies are well set but not too browned. This will yield a crunchier cookie. Remove from oven and place on cooling rack.
- Once cookies are completely cooled, place chocolate chips and coconut oil in a microwavable bowl. Microwave chips in 30 second increments, at 50% power, stirring every 30 seconds, until melted and smooth. Dip cookie until covered, remove using a fork or tongs and place on parchment or wax paper to set up.
Recipe Note
For a subtle mint flavor, add just 1/4 teaspoon mint extract. Use 1/2 teaspoon for a more pronounced mint flavor.
If you are using Mint Extract that contains alcohol and /or water, you should not use it in your melted chocolate coating as this will seize the chocolate. You can, however, use an oil mint flavoring for a deeper mint flavor. Add a small amount of the oil flavoring to the melted chocolate and stir well.
