Vegan Lemon Coconut Butter Cookies

Our Kookie Mixes are so versatile that you can make your cookies Vegan and/or Dairy Free with a few simple substitutions.  

You will need:

1 Butter Kookie Mix

1 Flegg**

5 Tablespoons Coconut Butter*** softened or slightly melted.

Juice of one Lemon

Zest of one Lemon

Optional Coconut Chips 

Preheat Oven to 350 degrees

Combine all ingredients except optional coconut chips.  Divide dough evenly by rolling into balls. Place on parchment lined baking sheet.  Flatten dough slightly.  Top with coconut chips if desired.  Bake 10-12 minutes.  Remove to rack and cool.


** we substituted Flegg for the egg.  Combine 1 Tablespoon of ground flaxseed with 3 Tablespoons warm water, set aside for 5-10 minutes until thickened.  Any other suitable egg substitute may be used.

*** we substituted Coconut Butter for dairy butter.  Any other suitable dairy butter substitute may be used.
