Mocha Chocolate Chip SnowCaps

You Will Need:

1 Chocolate Chip Kookie Mix

6 Tablespoons Softened Butter

1/8 Cup Cocoa Powder

1 1/2 Teaspoons Espresso Powder

Preheat oven to 325 degrees.  

Powdered Sweetener for Topping**

Mix all ingredients, except powdered sweetener, until well combined.  If dough is soft, refrigerate for 30 minutes.  Roll dough in to balls, dividing dough evenly.  Place on a parchment lined baking sheet.  Bake 15 minutes.  Remove from oven and cool on rack.

** We use an erythritol monkfruit blend.

Note:  We did not roll cookies in sweetener.  Instead, we made a mix of powdered sweetener and coconut flour and sprinkled (sifted) the mixture over the top of the cooled cookies.  The sweetener/flour blend covered well and was the right amound of extra sweetness.
