Raspberry Poppyseed Thumbprints
You Will Need:
1 Butter Kookie Mix
4 Tablespoons Softened Butter
1 Egg
1-2 Tablespoons Poppyseeds
Optional: 1/2 Teaspoon Almond Extract
Raspberry Chia Jam (recipe below)
Preheat oven to 350 degrees.
Mix all ingredients, except Raspberry Chia Jam, untill well combined. Roll dough in to even size balls and place on parchment lined baking sheet. Using the end of a wooden spoon or your finger, press an indent into each ball.
Bake for at least 10-12 minutes. Remove and cool on rack.
Once cool, fill with Raspberry Chia Jam or your favorite sugar free jam.
Raspberry Chia Jam
You Will Need:
1 pint Raspberries
2 Tablespoons Water
1-2 Tablespoons Sweetener (we use an erythritol monkfruit blend)
2 Tablespoons Chia Seeds
In a small pan, mix all ingredients except Chia Seeds, over medium heat. Cook until the berries begin to break down. Remove from heat and stir in Chia Seeds. Transfer to a glass jar or bowl and refrigerate. The jam will thicken as it cools.
