Pumpkin Streusel Muffins

What You Will Need:


1 Pumpkin Spice Kookie Mix

3/4 cup Pumpkin Puree

2 Eggs

1/4 cup Melted Butter

1 teaspoon Baking Powder

Streusel Topping:

1/2 cup Almond Flour

1/3 cup Chopped Nuts (Walnuts or Pecans)

1 1/2 Tablespoons Sweetener of Your Choice

3 Tablespoons Softened Butter

1 teaspoon Pumpkin Pie Spice

Preheat oven to 350 degrees.  Line 10 muffin cups with paper liners.

Mix together all ingredients except Streusel Topping.  Fill muffin cups 3/4 full. 

Mix together Streusel Topping ingredients in small bowl.  Top each muffin evenly with mixture.

Bake approximately 20 minutes or until middle is slightly firm.

Remove and let cool.

Muffins will last a few days on the counter.  You can store them in the fridge where they should last at least 1 week.  You can let them come to room temperature before enjoying or warm them slightly in the microwave.
