Keto Blueberry Strawberry Shortbread Cookie Skillet with Cream Cheese Frosting Sugar Free

You Will Need:

For the Crust:

1 Butter Kookie Mix

4 Tablespoons Melted Butter

For the Topping:

8 Ounces Softened Cream Cheese

1 teaspoon Lemon Zest

1 teaspoon Lemon Juice

1 teaspoon Vanilla Extract

1/3 Cup Confectioners Erythritol/Monkfruit Sweetener, or to Taste

2 Tablespoons Heavy Whipping Cream

1 to 1 1/2 Cups Blueberries

1 to 1/2 Cups Strawberries, sliced

Preheat oven to 350 degrees.

Combine the Butter Kookie Mix and 4 Tablespoons melted butter and mix thoroughly.  Press dough into 6 inch round Pizzookie pan.  Bake 10 minutes.

While the crust is baking make the frosting.  In a mixing bowl, combine Cream Cheese, Lemon Juice and Zest, Vanilla and Sweetener.  Whip until fluffly.

Add Heavy Whipping Cream, 1 Tablespoon at a time until Frosting Consistency.

Once the crust has cooled, top with the Cream Cheese Frosting.  Top with Blueberries and Strawberries.

Makes 8 Servings. 3 to 3.5 Net Carbs Per Serving depending on type of Berries used.
