Blueberry Chia Jam
You Will Need:
1 pint Blueberries
2-3 Tablespoons Water or Lemon Juice
Sweetener to Taste
2 Tablespoons Chia Seeds
In a small saucepan combine all ingredients except Chia Seeds. Simmer until berries begin to burst and cook down slightly. Mash the berries leaving some whole. Once the berries have started to break down, remove from heat and add 2 Tablespoons Chia Seeds, stir and place in a glass jar. Place in refrigerator, jam will thicken as it sets and the Chia Seeds absorb the liquid from the berries.
We love Chia Jam between 2 Peanut Butter Kookies, as a mix in for homemade Keto Ice Cream, as a topping for our Cinnamon Pecan KBites. The possibilities are endless.
Note: Other berries may be substituted for the Blueberries.
