Snowballs

You Will Need:

1 Butter Kookie Mix

1 Cup Chopped Nuts of Choice - See Notes

8 Tablespoons Softened Butter

Powdered Sweetener for Coating - See Notes

Preheat oven to 350 degress.  Line a baking sheet with parchment.

Mix all ingredients in mixing bowl until well combined.  Scoop dough into balls, using about 1 heaping Tablespoon per Snowball and freeze for 30 minutes.

Place frozen cookie dough on lined baking sheet and bake for 15 minutes.

Remove and cool on baking rack.  Once almost completely cooled roll Snowball in powdered sweetener of choice to coat.

Notes:

We used Pecans but you can use any nut of your choice.

For the coating, we mixed Coconut Flour with Powdered Erythritol/Monkfruit sweetener.  The Coconut Flour cuts the amount of sweetener needed so you won't get the cooling effect.  The Coconut Flour coats the Snowballs nicley.

Alternatively, use Powdered Allulose if desired.
