Chocolate Covered Strawberry Keto Cookies With White Chocolate Drizzle

 

Enjoy all the Sweetness of Valentine's Day without all the sugar.

You will need:

1 Chocolate Chip Kookie Mix

1 Egg

5 Tablespoons Softened Butter

2/3 - 1 cup Diced Strawberries

To Dip:

1 cup Sugar Free Chocolate Chips

1 teaspoon Coconut Oil

Optional White Chocolate Drizzle

Preheat oven to 350 degress.  Line baking shee with parchment paper.

Mix together Chocolate Chip Kookie Mix, egg and softened butter.  Gently fold in diced strawberries.  Scoop dough and place onto baking sheet.  See Note

Slightly flatten and bake 10-12 minutes or until the edges start to brown slightly.  Remove and cool completely on a cooling rack.

Melt Chocolate Chips and coconut oil in microwave, in 30 second increments.  Stirring after wach 30 seconds.  Stir until smoot and carefully dip half of each cookie in chocolate to cover.  Place on parchment paper to set.

Notes:

For this receipe we made the cookies larger.  Usually we get 15-16 regular sized cookies from this recipe but this time we made 7 large cookies.  I don't recommend doing that as the cookies are already soft and the introduction of strawberries makes the cookie softer.  If you want to make larger cookies, cook them slightly longer and make absolutley sure they are completely cool before dipping in chocolate.  

For the White Chocolate Drizzle, you can melt about 1/2 cup of Sugar Free White Chocolate Chips with about 1/4 - 1/2 teaspoon of coconut oil, stir until smooth and drizzle over the cookies.

2-3 Net Carbs per Cookie depending on the size.
