Keto Linzer Sandwich Cookies

You Will Need:

1 Butter Kookie Mix

8 Tablespoons Softened Butter

1 Egg Yolk

Zest of 1/2 Lemon

1/2 Teaspoon Vanilla

Raspberry Chia Jam - see receipe here

Powdered Sweetener for Coating

Mix Butter Kookie Mix, Butter, Egg Yolk, Lemon Zest and Vanilla until combined.  Shape dough into a disk shape, wrap in plastic wrap and refrigerate for 1 hour.

Prepare Chia Jam.  The receipe link above is for Blueberry Chia Jam, simply substitute Raspberries for the Blueberries to make the Linzer filling.  You can also use your favorite Sugar Free Raspberry Jam.

After 1 hour, Preheat oven to 350 degree=.   Remove dough from fridge and roll out between 2 pieces of parchment paper.  Using a circle cookie or biscuit cutter, cut as many circles as you can using all the dough. You will have to reroll the scraps a couple times to use up all the dough.  Using a small Cookie Cutter, cutout the middle of half of the cookies, these will be the top of the sandwiches where you will be able to see the Raspberry Jam.  Bake the small cutouts too.  

Place cookies on parchment lined baking sheet and bake for 12-15 minutes.  Remove to a baking rack and let cool completey. Once cool, spread Raspberry Jam on one cookie and top with one that has the small cutout.  You can sprinkle the tops with Powdered Sweetener before placing on top of the jam but if you forget and top the jam first, simply take the small baked cutout and place it over the exposed jam and the cover with Sweetener.  Remove the cutout and you should not have any sweetener on the jam.
