Peanut Butter & Chia Jam Sandwiches
You will need:
1 Peanut Butter Kookie Mix
6 Tablespoons Softened Butter
1 Egg
1/4 Cup Peanut Butter
Chia Jam
Preheat oven to 350 degrees
Mix all ingredients except Chia Jam until well combined. Roll dough into balls and place on parchment lined baking sheet. Slightly flatten dough and bake 10-12 minutes.
Remove from oven and let cool.
Chia Jam:
Place 1 Pint of your favorite berries in a small pan. Add 2 Tablespoons of water and 1-2 Tablespoons of your favorite Keto friendly sweetener (we use an erythritol and monkfruit blend). Cook over medium until berries have broken down. Remove from heat and add 2 Tablespoons Chia Seeds. Mix well and transfer to a glass jar or bowl. Cover and refrigerate. The jam will set as it cools.
Top each cookie with desired amount of Chia Jam or spread between 2 to make a decadent PB&J.
