You Will Need:
1 Butter Kookie Mix
8-10 Sugar Free Peppermint Candies
5 Tablespoons Softened Butter
1/2 Teaspoon Peppermint Extract
Optional Pink Food Coloring
Preheat oven to 350 degrees.
Place Peppermint Candies in a heavy duty ziplok baggie and crush them using a heavy object. We use a rolling pin.
Combine all ingredients and mix well. You can add Peppermint Candies to the dough or you can save them just to sprinkle on top of the cookies before baking. Or you can do both, add some to the dough and save some to sprinkle on top.
Divide dough evenly into balls. Place on parchment lined sheet and slightly flatten into cookie rounds. At this point, you can sprinkle crushed Peppermint candies on top of the cookies. Bake 10-12 minutes. Remove to rack and let cool.
