Peppermint Sandwich Cookies

You Will Need:

1 Butter Kookie Mix

1 Egg

1/8 cup Melted Butter

1/4-1/2 teaspoon Peppermint Extract

Pink or Red Food Coloring

Frosting - see recipe here or use your favorite Sugar Free Frosting

Mix Butter Kookie Mix, egg, melted butter, extract and food coloring.  Shape in to a disk, wrap in plastic wrap and chill for 30 minutes.

While the dough is chilling, mix frosting according to recipe.  Preheat oven to 325 degrees.

To make the cutouts, remove dough from fridge and place between to pieces of parchment paper.  Roll dough to desired thickness and make cutouts using a circle or biscuit cutter.  Carefully transfer the cutouts to a parchment lined baking sheet.  Using the scraps, reroll and make cutouts, repeat until all dough is used.

Bake cutouts for about 15 minutes.  Continue to bake just until the sides are about to turn golden.  Remember that Almond Flour baked goods will continue to set as they cool.

Once cooled, spread frosting on 1 cookie and top with an additional to make a sandwich.

Notes:  For the frosting, we used 1/4 teaspoon of Peppermint Extract and added crushed sugar free peppermint candies.
