Raspberry Almond Thumbprints

You Will Need:

1 Butter Kookie Mix

5 Tablespoons Softened Butter

1/2 Teaspoon Almond Extract

Raspberry Jam or Compote for Filling

Chopped Almonds for Topping

Heat Oven to 350 degrees

Mix Butter Kookie Mix and softened butter until well combined.  Place dough in refrigerator for at least 20 minutes.  

Shape dough into balls and place on parchment lined baking sheet.  Using your thumb, the end of a wooden spoon or the back of a teaspoon, make an indent in each cookie.

Bake 12-15 minutes.  Remove to a cooling rack.  Once cool fill each cookie with desired filling.  You can use your favorite Sugar Free jam, homemade Chia Jam or homemade Raspberry Compote.

Topped with chopped Almonds.
